The length of maceration (contact of must with the grape skins) depends on the vintage and decision of the winemaker. Fermentation takes place underground, in barrels from 200 to 2000 litres, spontaneously without the introduction of selected yeast. Until its first decanting, the wine rests on the lees without any added sulphur.

When we think about perfection, this is close to it. Very long finish of dry orange peel notes with some clementine citrus nose.
Handpicked grapes ferment in amphorae (Dolium) for up to one year; around the first days of the new harvest, Zorjan transfers the wine into barrels, where the wine gets more time to rest and is clarified by the natural force of gravity.
